I am delighted to offer a small range of Vegan Baking. It has taken a while to find recipes that offer tasty but stable baked items. It was a scientific challenge to bake without the binding qualities of eggs and butter. I found it difficult to find vegan baking that I liked compared to my normal baking. But I have to say that I did find a few delicious surprises. The ingredients used are sometimes more costly and the number of ingredients are more than in normal baking. I hope there is something here that you will enjoy.
Vegan Gooey Chocolate Caramel SliceThis plant based caramel is absolutely gorgeous. It's a time consuming recipe to make with long cooking and setting times but well worth the wait. The caramel is dairy free, and time is required to reduce the coconut cream down to a caramel consistency. There are a lot of ingredients in this slice but it really is exceptionally good for a vegan alternative.

Vegan Peanut Butter Chocolate CookiesThese cookies contain Whittaker's Oat Milk chocolate. They are crisp around the edges and chewy in the middle. These cookies hold their shape well and have a classic peanut butter and chocolate combination.

Vegan Double Layered Chocolate CakeThis is the classic double layer chocolate cake with chocolate buttercream (plant based) frosting. It is a moist cake, rich and full of chocolate! This would make an ideal celebration cake.

Vegan Anzac BiscuitsThese are very much adored by my regular vegan clients. They are just like the classic kiwi Anzac biscuit that you would want but vegan. They use gluten free flour, but because they also have oats in them, they technically cant be termed gluten free.

Vegan Afghan BiscuitsNo need to miss out on a delicious afghan, you can’t tell the difference with these rich and chocolatey biscuits . The cornflakes give them a delicious crunch. Iced with chocolate icing and a walnut on top.

Vegan and GF Date LoafThe dates are the hero of this loaf. This loaf is an unbelievable loaf because it is free from gluten, dairy and eggs. It is also low in refined sugar. It is still extremely tasty, with a a moist texture which you would expect from a lovely date loaf.

Vegan Chocolate Fudge BrownieNo need to miss out on a delicious fudgy chocolate brownie! This is gooey like a regular brownie with a rich chocolate taste. It also has texture from the chia seeds. Ingredients: Chia seeds, flour, cocoa powder, baking soda, almond milk, coconut oil, almond butter, vanilla extract and dairy free dark chocolate chopped. 20cm x 25cm $42 |
Vegan Chewy Muesli Apricot Slice This is a healthy seedy slice which has oats, coconut, apricot, peanut butter and seeds with a dark chocolate on top. Vegan Date, Carrot & Cranberry LoafThis loaf uses dates as the main natural sweetener, instead of refined sugar, and has the extra goodness of grated carrot, banana and cranberries. I like to slice it and then freeze it, so it can go into lunch boxes easily. this loaf is also dairy free. It can be made with gluten free flour too.

Vegan Ginger and Walnut SliceThis slice has a ginger base which has a vegan icing poured over the cooked base. The icing has both ground ginger and fresh grated ginger and lemon juice in it. It also has chopped walnuts added on top of the icing. The walnuts help to balance out the flavours of the ginger and lemon. Vegan Lemon BarsThe base is cooked which then has the lemon coconut custard cream poured over the top of it before it is chilled. Once the lemon custard is set, it can be cut into squares or finger slices. Vegan Chocolate Peanut Butter Bliss BallsThese bliss balls are delicious and make a wonderful treat or healthy snack. They are packed with dates, almond meal, seeds and coconut. They have a very small amount of maple syrup which is the only sweetener. These are gluten free and dairy free.

Vegan and GF Extra Dark Chocolate Chunk CookiesThese crisp and crunchy cookies are both gluten free and vegan. I use Whittakar's 72% dark chocolate which are cut into chunks. They are for the dark chocolate lovers!

Vegan Ginger LoafThis loaf has the wonderful warming tones of ginger and spices. It has ground ginger and chunks of crystallised ginger and chopped dates in it. It can be toasted and served with vegan butter. Main ingredients: Flour, ground ginger, cinnamon, nutmeg, salt, baking powder, baking soda, almond milk, apple cider vinegar, coconut oil, treacle, syrup brown sugar and dates. 9cm x 19cm $38 |
Vegan Avocado and Tomato Salsa Seedy Crackers (GF) or CrostiniThese can be done on the vegan homemade seedy crackers or on toasted crostini. The seedy crackers are gluten free and dairy free. Both options are very much adored by my vegan clients. Avocado's are seasonal, and this would determine the quality of the avocado. An alternative topping is my hummus and antipasto mix either on seedy crackers or crostini.
Main ingredients: Avocado, dill (seasonal) or other fresh herbs, tomato, red onion, lemon juice, salt , pepper, chilli, pumpkin seeds, sunflower seeds, sesame seeds, rosemary, garlic, salt, almond meal, psyllium husk and olive oil. Vegan Vegetable RollsI have adapted this recipe from my vegetarian rolls. I have used a plant based pastry (this is a commercial pasty not homemade) and the wash on the outside of the pastry is olive oil. I have had to use psyllium husk to bind the pastry together at the seam so it doesn't split. The veggies inside are a delicious combination of roasted kumara, red kidney beans, red onion, courgette and herbs and spices. Main ingredients: Plant based pastry, roasted kumara, red kidney beans, courgette, garlic, tomato puree, paprika, cumin, coriander, parsley, lemon zest, sesame seeds, salt, pepper and sweet chili sauce. $3.70 per roll |
Vegan Chocolate Cupcake or Savoury MuffinThe chocolate cupcakes are an absolute winner. They are gluten free and dairy free and are light and fluffy.
The savoury muffins are packed full of tomatoes, sweet corn and caramelised onions. Perfect for a savoury snack Main ingredients: Vegan butter Almond milk, sugar, syrup, cocoa, gluten free flour, baking soda, icing sugar. Savoury muffin has wholemeal flour, flour, baking powder, baking soda, red onion, sugar, salt, Italian herbs, tomatoes, sweet corn, spring onions, almond milk, apple cider vinegar and olive oil. Minimum order 12 pieces $3.50 per muffin and $4 per cupcake. |
