With the " Bespoke Baking" range, I have put together some of the very special recipes that have been raved about over the years . These recipes are my favourites and have a special place in my baking repertoire.
Luscious Lemon SliceThis has a short pasrty base covered with a tart-sweet, velvety, lemon topping. It makes a delicious dessert and is a great to have with coffee. Frankly, I’ll eat this any way I can, as I’m mad about lemon in sweet things. Its sharp edge just has that brilliant way of cutting cleanly through sweet, rich flavours. Best served on the day. Chocolate Caramel SliceThis is a decadent and delicious slice. It has a shortbread base, and is then covered with scrumptious caramel and topped with dark chocolate. Who would ask for more? It is equally comfortable with champagne or coffee. Best stored in the fridge and brought out shortly before serving. Pecan Pie Gone NutsIf you are a pecan pie fan, then you will love this slice!!! It has a short cake base, covered in a selection of nuts (walnuts, pecans, hazel nuts and flaked almonds) in a gooey filling. Everyone loves the fact that this is so moreish but not overly sweet. It can be kept in the fridge, which makes it chewy, or at room temperature for a softer consistency.

White Chocolate BlondieThis is a lovely recipe shared by Angie’s friend Libby- all the way from Texas. It has the same texture as a chocolate brownie, a little gooey and crunchy on top, but it is more of a caramel flavour. It is rich, so a little goes a long way. Main ingredients: Butter, brown sugar, eggs, vanilla, flour and white chocolate. Size 20 x 27 cm Cost $30 |
Louise CakeNo baking collection is complete without Louise Cake. It is a traditional favourite – I remember my Nana making it. It has a shortcake base, spread with jam and topped with a coconut meringue. Yum!! Main ingredients: Butter, sugar, eggs, flour, berry jam and coconut. Size 20 x 28 cm Cost $34 |
Orange and Almond CakeThis cake is special. It is made up of almond meal and polenta, and is therefore also gluten free. The cake has a great texture from the polenta, which gives it a slight crunch. The cake does have a dark outer edge, but the cake remains extremely moist, and has a wonderful orange zing and almond flavour. The orange slices on top of the cake are thinly sliced and then poached until soft and sweet. Toasted almonds are scattered on top to give a contransting crunch.

Raspberry and White Chocolate BrownieThis dark Chocolate brownie is packed with raspberries and chunks of white chocolate. It is truly decadent and would be ideal for a special occasion or a dessert. It has a crunchy top and edges, but the centre is exceptionally gooey and fudgy. It is best kept in the fridge for up to 5 days, although I doubt it would last that long!

Caramel Walnut SliceThis is an exceptional slice and it would be amazing as an after dinner sweet treat. It has a short pastry base which has a layer of caramel over it. The top consists of the short pastry which has been crumbled up, and then mixed with chopped walnuts and chunks of dark Chocolate. (Whittakar's 50% Dark Chocolate) This is scattered over the layer of caramel and baked.

Ginger and Almond SliceThis slice has a wonderful balance of flavours without being too sweet. The almond meal and flaked almonds add texture and make it nourishing. The real winner is the marvelous warming spice of ginger. The small chunks of crystalized ginger gives the slice a little bit of zing.

Dark Chocolate Almond CakeThis is a decadent dark Chocolate cake made with almond meal, and is also gluten free. It is made with 72% cocoa Whittaker's dark chocolate, a little coffee, brandy, eggs and almond meal. This cake is incredibly dense and has the consistency of a Torte. It is a rich cake, but not a sweet cake. The almond meal gives it wonderful flavour. The icing on top is a chocolate (50% dark chocolate and cream) ganache which is decorated with dark chocolate curls. This cake will feed a large group or could be used as a dessert.

Large Carrot CakeThis is a great to have when catering for a large function. It is twice the size of the normal carrot cake, and being rectangular, is easier to serve. This would be able to serve at least 25-30 portions.
Main ingredients: Grapeseed oil, eggs, sugar, flour, whole meal flour, cinnamon, ginger, mixed spice, salt, walnuts, sultana's, baking soda, orange juice, cream cheese, lemon juice, lemon zest, icing sugar, butter, apricots, cranberries, pumpkin seeds, Size 31 cms x 21cms Cost $80 |
